Picked up a bunch of very old knives from my mom. Probably 60 or 70+ years old.
They are made of steel and seem to sharpen and hold an edge well.
The issue is they rust very easily.
Do any of you have knives like this and what is your routine for caring for them and keeping the rust at bay.
I have been coating with a bit of vegetable oil but seems there should be a better way.

I clean them with Brillo pads when they get real bad, then a little peanut oil.

I have a few that are about 80 years old that my grandfather made.Do not cut tomatoes or anything acid with them.Always wash by hand and put a little olive oil on them.I am going to buy a knife roll for mine and my other really sharp knives.I don't like laying my Shun knives where my family can get cut on them.

Older carbon steel blades will usually develop a nice patina on them, which I like. Just make sure you dry them well after washing, then apply a light oil coating.Happy Trails~thirdeye~Barbecue is not rocket surgery -

I just came back from Paris with a few of those exact knives. Opinel brand. What do you do with yours?
I cant seem to find a good use for mine.

If storage space isn't an issue you might want to consider these hard plastic knife vaults for individual knife storage. This way when you do want to take some specific knives with you you don't run the risk of taking them all as you do in a knife roll. I really like mine and they are sturdy! Here's some of my favs I take when I go to class or eggfests.
