this was a great cook.

Pork Loin - Bone In

Meat Used
“Buckhead Beef” - 4.8 lb 8 bone
FYI - they said it was a deal at 6.99/lb

Brine pork for over 12 hours

Egg set up indirect
- use ½ red cup apple chips

Three stage cook
- first set up for a hot cook to sear @ 450 for 20 min
- next remove from egg and let rest for 30 min
- lower egg temp to 300 degrees
- cook to 130-135 internal
- pull and let rest 30 min then carve
