Merry Christmas everybody!
I am cooking a small chicken (5 pounds or so) on my egg today.
Nothing fancy, I halved it... rubbed it with olive oil and some of that Tony Cachere's creole seasoning.
I'm smoking with some cowboy lump and some chunks of dried out oak and pecan from neighboorhood trees.
That pecan wood smoke really gives the chicken a nice color and interesting flavor.
So, what are the rest of you up to today?

We do brinner on Christmas eve. Bacon, pancakes, grits.
I save the big meal for tomorrow when the kids excitement has waned and I can actually move three inches without someone asking me if we can open presents yet. Tomorrow is a beef wellington, roast tri-color fingerling potatoes, green bean bundles, and a triple chocolate cheesecake topped with an extra dark chocolate ganache. -
Spent the daylight making beef stock/demi glace for tomorrow's rib eye roast.
Will be steaming Maine lobsters for dinner (my mom's Christmas gift to us).Egging in Crossville, TN -
Tomorrow we are doing a low country boil... which looks like we'll be doing in the rain.

Do you make the Cheesecake ? If you do, I am impressed especailly with dark chocolate ganache.

Just finished injecting and rubbing two Egret hams to put on the egg in the morning.

Tonight I fixed a huge Paella with Chicken, Scallops, Sausage, Shrimp, and Mussels. It was the best one that I have fixed yet. I think the best part of tonight's was Fidel's Lobster stock. It was the best, Thanks buddy! Tomorrow I will be fixin Smoked Maple Bourbon Ham, Baked Beans, Mac and Cheese, 7 Layer Salad. It will be great.
