How would you cook a deer roast on the egg?

    JM:[p]Venison rib roast? I would cook it direct at about 375º or so till the internal reaches 118º and let it rest covered for a few minutes if you like it rare to medium rare. Remember, this is not a thick cut and it is easy to over cook.[p]venisonribroast2.jpg

    I slather mustard, then a favorite rub, and then I completely wrap it in bacon, (top and bottom). Ithen cook it at 350 until internal hits 140. Slice and enjoy.
    This is for a rear haunch roast.
