Well, the students loved it. Of the 42 pizzas cooked, only one was burned...not too shabby....We were able to do the 42 pizzas in 1.5 hours on 2 XL EGGS. They were AMAZING. Here are some of the pics of the fun....

The secret to doing mass amounts of pizza is an old trick I learned while working in a pizzeria for 6 years. You create what is known as a brown. This is a pre-cooked shell with a tiny bit of sauce on it. To make these, you preheat your oven or EGG to 500 degrees, form your crust (we used the pre-made dough balls from Sam's Club that were divided into quarters) and then put a tiny amount of sauce on it to just cover it. Place it on a pizza screen that has been sprayed with Pam and cook for 6 minutes. Pop any bubbles that have formed on the top. Set aside and let cool. These can be stored for 2 or three days as long as they are kept cool.
To do the pizzas, we let each person get a brown, then put all their toppings on that they wanted. If you do more than 4 toppings, do half under the cheese and the other half on top of the cheese. We then put them in the XL EGGs that were set for 350 degrees to melt the cheese and heat the toppings up....about 6-10 minutes. Just watch to make sure you do not burn the crust.
This is a fun party for the students and everyone gets to eat what they want on their pizza.Kevin Jacques
