If you were to purchase a 1/4 cow and could have it butchered any way you wanted, what cuts would you ask for. (besides the obvous steaks)

Brisket, clod , ribroast, Tri-tip etc. ???

I don't know much about it other than what I see in the stores.


What should an egghead ask for?

    This probably isn't the answer you're looking for but it's what I would do in your situation. Get what you like. Look through all the beef recipes on this site and read some bbq cookbooks and figure out what sounds good to you. Brisket and Tri-tip seem to be popular around here.

    Years ago we would buy halfs then went to 1/4's.
    Do you want the front or back.
    How long do you want the hang time to be?
    How big/heavy do you want the cow?
    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

    This cow is being raised on a friends farm.
    The owners are into steaks but wind up grinding many of the good BBQ cuts into hamburger.

    So I think i can get just about anything I ask for.

    Just not sure how to instruct the butcher on what to give me.

    Never had a clod so i'm going to try that for sure.

    Didn't know to ask about hang time.
