Standing Rib Roast (pic Heavy)

Ok so my dad and his family were in town and dad and I found standing rib roast on sale for $5.99 lb. It had a choice grade. We decided to have it for dinner when I invited my boss over. I served it with roasted fingerling potatoes that cooked under the roast through out the cook. I also made a Bearnaise to serve with the sauteed asparagus that was also on the plate. I forgot to take a picture of the plate sorry. Hoss

I rendered some pepper bacon down and then sauteed some onions and garlic in the bacon fat. I tossed the potatoes in the bacon fat and onion mixture added some fresh herbs (thyme and rosemary) S&P then set them on the plate setter. I cooked the whole meal at 275* for 2.5 hours internal temp of 124*. Hoss
