Cooking turkey tommorow, ok to brine only over night?

Unknown
edited November -1 in EggHead Forum
Greetings, going to do a turkey tommorow, think it would be ok to brine only over night? What do I do once it is out of the brine. Does it have to be rinsed and "rest" ?

    Daniel,
even 12 hours in a brine is worth the effort. As for rinse - yes by all means but just make sure it is a cold water rinse when you do. After all you don't want to run the risk of a visit from your country couisins Sam and Ella!

RRP,[p]No rest for the wicked turkey after the rinse; put pat dry, put on the rub if you're using one and pop her in the cooker.[p]Ken
