A Tale of Two Lobsters

Last night I did the Dwell In The Shell lobster, with a couple of minor tweaks. I always forget how much I like these guys.

Bought two tails Saturday @ Sam's. Wasn't planning on egging them till it snows. Guess I have to get a couple of more to replace these. Lobster looks great.
PS- Grill lifter works great.

Hey,
My buddy is here ogling your lobster tails as i show him the forum. He doesn't know much about the BGE but he is in the restaurant business.
He wanted for me to tell you that if you want your tails to be flat, run a well soaked wooden skewer through them before cooking and they will lay nice and flat on the plate after cooking!
Just don't forget to remove the skewer before serving!
They look awesome! -
Yep, that is a cool trick when cooking under a broiler.... but the key to this recipe is basting them when you turn them on their backs. The curl prevents the tail meat from overcooking (by moving it farther away from the fire), and it also acts like a shower cap for holding the garlic butter and lemon basting liquid on the thicker meat.Happy Trails~thirdeye~Barbecue is not rocket surgery
