How long should turkey set before cook

Hello all and happy thanksgiving. Been awhile since I have posted. How long do you put turkey out to rest prior to cook? I recall an hour. I am brining overnight and doing it ala mad max style without the gravy.
Temp I usually do 350 so you figure about 15 min per pound roughly to and pull at 160 breast 175/180 thighs?
Memory is not as good as it used to be, oh it has always sucked

the 160/180 is correct.
take mine out put it on the counter as im lighting the egg and preparing the butter paste etc... so its probably close to an hour
Id think twice on that gravy it is mighty darn good2 LBGE
