my wife and i were at a buffet a few weeks ago that served up a really good salmon, and she told me to try to replicate it on the egg. . .it turned out really good, although as i'll discuss below, the relish could use some more work. .. .[p]first, i set up the egg direct at 400 degrees, with a layer of lemon slices on the grid (i really like doing this for salmon, adds great flavor and makes the fish really easy to turn)[p]LinkPhoto?GUID=42f3688a-7303-6aca-1fdf-5a9b6af31f74&size=lg
[p]sprinkled a light coat of Dizzy Raging River Rub on the salmon, and put it on the grid skin side up to start for about 7 minutes. . .turned the fish then brushed on a light coat of hoisin sauce. . grilled for about 7 more minutes until done. .. [p]made up a relish of:[p]1 diced mango
1 diced red pepper
1 cup frozen corn
fresh chopped cilantro
1 tablespoon sesame oil
1 tablespoon hoisin sauce[p](let it all mix and set for a couple of hours. . .it was good, but next time, i think i'll leave out the sesame oil and maybe put in a splash of orange or pineapple juice. .. nothing sacrocinct to this recipe). .. we really liked it with the fish though, even as is. . .[p]here it is served up with roasted baby white potatos and a salad. . .[p]LinkPhoto?GUID=4896bdd4-6eec-766f-3f63-669c5c4255fa&size=lg[p][p]
