Italian Beef ala Large Marge

Started with a 8 1/2 pound tip roast (sunday) rubbed with raising the steak, basil and oregano
on at 375 indirect
pulled at 125 internal, rested and into the fridge for a couple days
Opps ain't gonna fit on my toy slicer :huh:
had to cut it in half
all sliced up and ready to go
bell peppers, onions and garlic in EVOO
add the meat
and the dripping from the cook along with beef and chicken stock and it's simmering away at the moment
about another hour or so and with the help of a couple rolls I'll be in heaven :woohoo: :woohoo: :woohoo:
