Wow. What a way to star the year. Generous, warm hosts Mad Max and Brett threw a hell of a fest today. I am pretty wiped, so I'll get right to the point....[p]I did some squid as an appetizer. It was devoured in seconds. This was especially fresh stuff.[p] Squid.jpg[p]These boys did some serious cooking. First as acquaintances, then as true friends. Amazing indeed.[p]Oh. And my Maryland Terps slammed West Virginia in the Gator Bowl. What a way to start 2004.[p]Hope everyone had a fantastic holiday. And just think.....it is almost the weekend!

    <p />Butane Roy,[p]OMG What A Delicious Roast![p]The source of this ribeye roast was my dad - who is a cattle feeder in Iowa. I have some corn ground there too, so I sell him my corn & he feeds his cattle with it. And if I'm a good lad he shares some of the beef with me. No mad cow worries here![p]This has to be the best ribeye roast I have done - Fired the egg to 700+ and then sprinkled some Jack Daniels wood chips in just before inserting the roast rubbed with Cowlick and olive oil. Set the egg controls to the 350 position (top and bottom). Half way through I rotated the roast 180 degrees, and added a couple more chips for good measure. About 75 minutes later, the temp probe said 130 so I took it off and let it rest for about 10 minutes.[p]Carved it up on my very own "pig" and you can see it here. The new year is starting out being very good to all us eggers![p]Chuck[p]

    good mornin and happy new year to you and larry. . .it was indeed a special day. . .great company and soooo much good food. . .i already told my wife, tonights its pasta, i've had about as much meat and fowl as i can stand (well, at least till tomorrow. . .). .. and as i sit here watching it rain, i can't believe what perfect weather we had yesterday. .. sunny and in the high 50s, so we were able to make it a great outdoor party. . .

    Nature Boy, Sounds (and Looks) like ya'll had a great day! That chicken looks "melt in the mouth" fantastic! What did you use on it? I've never had squid but after seeing the picture think I may have to try it! Happy New Year!!

    chicken thighs, coated in 50/50 dizzy pig dizzy dust and tsunami spin, lo and slo at a little over 200 degrees dome temp for about 3 hours. . .turned up to 325 for the last 20 minutes or so with a healthy dose of 'bone sucking' sauce. . .yummy. ..[p]nature boy does the squidilys and they are great. . .he'll have to weigh in with marinade recipe. ...[p]enjoy. . .glad to see you are over your cracked firebox crises. . .next crises will be your 'stuck' dome and bad gasket. . .heee....another thing all eggers look forward to eventually. . .

    mad max beyond eggdome, Yes,I'm over the crisis after all the support from everyone. I went ahead and cooked my pork roast and it came out great so ya'll were right! Thanks! Now I want some of that chicken! Can't wait to get to the store! :-)

    Yes, we had a great day indeed. The food that those boys whupped up was incredible, and it just kept coming.[p]Squid is amazingly good when fresh and cooked up right. Hard to believe something so good for you can taste so good. I usually do something similar to a recipe I posted a ways back....link below. Yesterday I improvised.....marinade of oyster sauce, peanut oil, sherry and Tsunami Spin.[p]The sauce was a real simple kethcup/hoisin sauce, lime juice and black pepper. [p]We decided to do this more often. I might just head back to the market today and pick up some more! Small squid work best, and what I normally use......but I saw some MONSTER squids there yesterday.....like 18 inch long bodies. I am thinking of trying an experiment to cook up a real big one, and slice the rings especially thin....almost like a squid pasta.[p]Happy new year back toya Tanya Tucker!
