I have always used mustard prior to applying rubs to pork butts, brisket and ribs....it was always cheapest to us...any difference with EVOO

I have tried both without much difference it just helps hold the rub on. I have noticed more of the spice taste if you spice then mustard and spice again

I've always used mustard on slow cooks (brisket, ribs, pork butt) and EVOO on quicker cooks (steaks, fish, pork or beef tenderloin).
My theory is that the vinegar in mustard helps act as a tenderizer on longer cooks. I don't know if there's any truth to that theory, but I've been happy with my results. :cheer:
You probably should experiment with both methods and stick with whatever you like better.
