My entry for IronEgg Throwdown 4:
Egg, Tomato and Spinach Gratin, served on Brown Rice:
The RAWs:
My starch is brown rice, the green veggie is spinach, the cheese is grated Swiss and the canned good is diced tomatoes.
My first challenge was to get the fire going after a week of REALLY wet weather! Seemed to take an EXTRA long time, but once I had it going, I got the eggs on (I really need a different sauce pan for use on the Egg).
The eggs are quick, bring to a boil and take them off. The rice was going to be a different story. That went on just after the eggs went on and
I might add...Along with more "dry" lump. I thnk the lump that was in the Egg may have taken on a lot of moistue! It just wasn't giving me a good fire.
The base for the dish (atop the hard boiled eggs) is a sauce made of onion, garlic, celery, tomatoes, spinach, sweet vermouth, Thyme, salt and pepper. After the eggs had come to a boil and came off, ole # 9 took the place of the sauce pan and rice pan too, on the grid. First the onion, garlic and celery got a sauté .
Then tomatoes, chopped spinach, wine and Thyme got introduced to the veggies.
Once I had the Egg set up for the oven, with the plate setter, grid and raised rig, the rice and sauce got put back on!
With the rice up in the dome and the sauce simmering below, this cooked / reduced until the sauce was almost dry. It didn't really take all that long (maybe 20 to 25 minutes at most), I was surprised!
With the rice still in the Egg steaming away, it was time to assemble the gratin.
First a layer of eggs that had gotten quartered, salted and peppered. Then the sauce was added atop the eggs. And finely, grated Swiss cheese.
Once assembled, that went into the Egg (rice STILL steaming away) and baked for about 15 minutes.
Finely the rice was done and I moved the gratin higher in the dome....Thinking I could brown the cheese a bit.
Well...With all the opening of the Egg it never got hotter then just over 300 F. So, that browning never did happen before I was afraid the bottom was going to burn!
No matter, browned or not, the gratin was REALLY good served atop a spoon of "perfect" rice.

Roasted Poblano peppers stuffed with a cilantro rice broccoli stuffing mixed with chipotle peppers and cheese served with melted cheddar cheese on top.
Pic 1 - Ingredients - yes, I used Jasmine rice in a Mexican dish, cause it was the only rice I had on hand.
Pic 2 - Roasting poblano peppers on the egg to blister skin so it could be removed
Pic 3 - Rice cooking on the egg, letting the cheese melt in and the ingredients blend together - I used canned chicken broth here.
Pic 4 - Peppers were peeled, cut open, seeds removed and stuffed with the rice. Egged for 30 minutes on the mini at 350 dome, on a foil covered pizza stone. Then melted cheddar cheese on top for 5 minutes.

The qualifying items I used are as follows:
GREEN VEGETABLE - Broccoli and green Poblano peppers
CANNED GOOD - Chicken broth and Canned Chipotle peppers

The ingredients were:
Kalijira rice (a tiny grain rice from Bangladesh which cooks in less than 10 minutes)
Poblano peppers
Green onions
Meunster Enchilado cheese
Canned black beans
Pickled Jalapeno's
The standard bean seasonings of Summer Savory and Oregano
The cook was simple enough, I started the water and rice with the grate in the normal position, then after it came to a boil moved it higher in the Egg atop a griddle to simmer. Meanwhile I prepped the peppers, grated the cheese, chopped the onions and jalapeno’s, and drained and rinsed the beans. When the rice was done, it was combined with all the filling ingredients, and the dried herbs, then loaded into the poblano boats. They went on a 275° Egg with a raised direct set-up. Cook time was about 45 minutes.
The ingredients are shown in the first picture, a collage shows the rice and peppers in various stages of cooking, and the final picture is the plated side dish. This one will be my entry photo.

The side I came up with is Improvised Scallop Potatoes. The starch is Yukon gold potatoes, the green vegetable is a green pepper. The cheese is Swiss (I would have preferred Gruyere yet that is what I had kicking around! The canned good is Campbell's Cream of Celery Soup. Also included is cooking onions along with some thyme and rosemary from the garden.
The raws are in the picture "The Raws.jpg". I served the side along with some Rib eye steaks and some asparagus, cooked in foil with a Japanese vinaigrette. I included a picture with all raws -- see Raws and Friends.jpg.
The picture "Improvised Scallop Potatoes.jpg" shows the final preparation of the side before it was introduced to the egg. "Everything on the Egg.jpg" shows all dishes being cooked. Note, the asparagus is in the tinfoil. Finally, "Dinner Plated.jpg" shows the plated final product.
Oh, yeah ... it was awfully yummy.
