Had this yesterday and could not get to my pictures from work. This has been my go to for a real beefy flavored cut of meat. One of things that I like about it is that you can find a cut of it weighing in at one pound or go to two and a half pound hunk will be enough..Lots of times when I am alone at night and just cook for myself a one pound cut is great.Like every thing else in life this cut of meat was a poor mans cut and could be purchased for around $1.99 per pound.Mind you you this was only about four years ago when I was introduced to the cut.The rest of the story is history.
This was a quick one for the wife and myself yesterday.

Darnoc,
There I go beginning to feel like Pavlov's dog again! :P
Great pic's! Thanks Tim -
Looks perfect!
How did you cook it? Temp? duration? etc.

Bill,
Good looking cook.
I picked up a flat iron today at Blooms for $5.99/lbs. -
I cooked it at 700 degrees for three minutes per side. Then put it aside to rest for twenty minutes and let the Egg cool down to 400 degrees. Then cooked indirect till temperature for the flat iron came up to 135 degrees and pulled it.
Enjoy. -
What happened last week when Food Lion had them on sale for $3.99? Being a chain store they should honor their advertised price on what they sell.I would have had a talk with the store manager on that issue. You should also scope out smaller grocers and talk to the butchers. You might be surprised at what you may come across.

Yep. Bloom and Food Lion's Weekly Circulars are different so I guess it's that way so as not to honor one stores adds. go figure.
And I hear ya, I'm on constant patrol for butchers/small neigborhood stores. -
Great looking steak and sweet taters too.
-
Great piece of meat. if it is cut verticaly instead of horizontally it is known here in Norcal as a coulotte.
Who would have thought that people would pay 3.99-7.99/lb for a chuck cap? I'm guilty... -
yes they are a favorite
- great in potatoes, salads, and stand alone
but yours look GREAT -
I paid almost 10 bucks for a pound
Am I paying too much? I admit that it is more than anything I get at Cosco, but it wasn't Cosco.
