Cooking a butt and a brisket overnight and at the sametime. Since I can't place both on the same grid, I'll be putting one on a upper grid.

Does it matter which one is on top? I'm think the brisket should be on top.

Which one should have the meat probe from my digi? I'm thinking the butt since it's the thicker one.

What about the drippings falling on the bottom chunk of meat? Can't figure this one out.
