Cooking a butt and a brisket overnight and at the sametime. Since I can't place both on the same grid, I'll be putting one on a upper grid.
Does it matter which one is on top? I'm think the brisket should be on top.
Which one should have the meat probe from my digi? I'm thinking the butt since it's the thicker one.
What about the drippings falling on the bottom chunk of meat? Can't figure this one out.

Butt over the brisket.
Put the meat probe in the bottom piece of meat - it will likely cook slower unless it is considerably smaller than the top piece.
Butt drippings won't hurt your brisket. As Emeril says, pork fat rules. -

I like Fidel's positioning, me, I wouldn't worry about the seasonings, the flavor is in the meat and the bark/seasonings just add to the goodness.

Other than the positioning, you will find the rest really doesn't matter much. Stuff always tastes better on the egg.
