My question is why did the coach have those 2 kids there in the first place? I understand having defensive backs in position in case of a fake field goal then trying to score a touchdown. However, having the 2 players standing next to each other right in front of the goal post did not look like defense against a run or pass.

The two players near the goal post failed to do their job correctly, but it was the coaches fault.
If the ball had been allowed to fall to the ground and and simply lay there, the offensive team cannot advance it as it's a missed field goal. The defenders by taking possession and running with it, then "fumbling" served only one purpose, turning a dead ball into a live one. The coaches ought to be ashamed of failing to educate to player who now faces the embarrassment.
