Found some beef "short ribs" at the butchers. He asked if I wanted them cut up. Nope. Each one was about 1.25 pounds to start with. They are on a medium, so you can see that they were about 12" long. Painted with a mix of canola oil and DP Cowlick. Over a drip pan with a dome of 250 for just short of 5 hours. Turned them from one side to the other half way thru. Added a couple of packets of potatoes and garlic cloves in butter in the last 1.5 hour.
Very tender, moist, with lots of the excess fat rendered out.
They were big enough that if I had them out, I would have needed a great big doggy bag.

Don't know the structure of the beef well enough, but the one I had had a muscle chunk on it that was about as nice as a steak.

i couldnt tell you which is which either, all i know is that if i see lots of meat they are good :laugh: to bad i dont find that often enough with the beef ribsfukahwee maineyou can lead a fish to water but you can not make him drink it

I think the butcher was a little surprised that I didn't want them cut up. I had to admit that once I got 'em home, and unwrapped, they seemed to have grown!

We buy ours at Fairway Beef in Worcester, about the same size as gdenby's. They sell them at Sam's cut up thin but the say they will custom cut them for you, haven't tried them yet though.

When they come out (not a sure thing) they mix the slo-cooked richness of ribs w. steak. My wife wondered why I chose them for my birthday last year. Once she tasted them, she understood.

Local small town groc. store meat dept. guy gave me the same old song and dance about getting some beef ribs, I'd have to take or split a 70# box . . . crap. :(aka marysvilleksegghead
