Found some beef "short ribs" at the butchers. He asked if I wanted them cut up. Nope. Each one was about 1.25 pounds to start with. They are on a medium, so you can see that they were about 12" long. Painted with a mix of canola oil and DP Cowlick. Over a drip pan with a dome of 250 for just short of 5 hours. Turned them from one side to the other half way thru. Added a couple of packets of potatoes and garlic cloves in butter in the last 1.5 hour.

Very tender, moist, with lots of the excess fat rendered out.

They were big enough that if I had them out, I would have needed a great big doggy bag.
