Chicken enchiladas - very tasty

Cooked up a spatchcock a few days ago, with plans for some enchiladas.
This meal takes a while, but it was delicious. The kids ranked it right up there with hamburgers, pizza, and tacos.

Man, that looks good. I probably couldn't eat more than one pan at a sitting.

It was good. We should have had company over, as we only ate one pan. May have to freeze one...

so tell me...what's the white/cream sauce you using???

It was butter with flour (1/2 cup each) then add real chicken broth to the desired consistency, then add a cup of sour cream. Top that off with a sprinkling of white cheddar once the sauce is spread over the enchiladas. I meant to add jalapenos as well, but forgot, so had to settle for Tabasco on the finished enchiladas. Inside the enchiladas was chicken, onions, and a mixture of mozzarella and white cheddar.
Got the recipe from my mom.

Great looking dish Richard. I may use that sauce recipe it looks pretty good. Gotta love moms

Forgot to say - cook the corn tortillas in oil for a few seconds before drying on paper towels and wrapping with stuff. I think they would be dry and tough if you don't do that. Of course that makes it not too healthy. (I used olive oul, so it was just the calories...)
