I put on a 9lb Brisket last night at 9 p.m.---meat temp is at 176* now. I'm going to pull and wrap when temp reaches 195-200*. After that I'm going to put some garlic sausage and hot dogs on for the kids.

Big party was last night at a friends house, today just the wife & I and we're gonna do a beer butt chicken, will try to post pics later

We had New York strip steaks on Friday, pulled pork and ABT's last night. Today will we standard, for us, Labor Day food. BBQ chicken, burgers and dogs.

Getting ready to put 2 racks of spares on once these pesky butts finish - at 195 just about ready to pull 'em.
Also I cut up 4 lbs of brisket and it's in the Hi Mt jerky cure for 24 hours or so. -
Started with a breakfast roll. Not pretty but very good. My friends loved it.
Got these beauties on. They smell great, apple smoke.

Yeah, I know it's ugly. I put it together late last night and was running cocktail blood through me at that point :laugh:
Any ways. Ground smoked sausage, swamp venon on that. Smoked peppa jack, shredded. mixed in 3 eggs. Rolled out the dough spread the spread hahaha. I should have french rolled it, just so you know. Spray pan let it rise again and bake. Brush with butter. I used apple wood. It's very good!!Molly
