I have been putting out a lot of ribs and brisket, but have not cooked pork butts. I seem to be reading a lot of conflicting information. For an 7-8 lb butt, what is the cooking time with the temp at 225 at the dome? Thanks in advance.

Cook to temp i.e., pull at 200 degrees then rest for at least an hour. I'd recommend a dome temp of 250. I've cooked at less degrees but it lengthens the cook. Plan 1.5 to 2 hour per lbs.

In case you're an Auburn fan, I'll help you with the math:
8 lbs * 2 hrs/lb = 16 hours (this should be your max)

I usually plan on 18 hours. Less pork less time, my last cook took over 20 hours but then again I had 7 butts(50lbs)on the XL.
