I don't have the container for marinating. Is there any way to do it with the bags and still make a seal because of the moisture trying to escape?

If I were you I would just get the marinating canister. If you try to marinate in the bag it will pull the liquid into the machine and it will go "south" on you in no time. I also have the upright canisters and use them all the time. Bucky Buckshot

You can, just squeeze as much air out as you can and do a manual seal. I have the square cannisters and they are awesome. They are like $20.00 per in Canada. Well woth the investment.
