i had 2 the younger pit had one .. 1 rack and one rib left ... 6 hours at 250 could have gone longer . parts were fall off and parts were chewy

Nice looking short ribs. I've been playing with them for a few years now. I've tried cutting them up per rib, cut in half, and doing it whole, I think 3 per pack. I've tried them at 6 hrs, 7hrs... I found it was best to get em as thick as I can and smoke em indirect at 250 for 10 to 12 hrs. they are so good.
