I hadn't spatchcocked a chicken in awhile and Wess's post about doing one got my mouth to waterin'. After splittin' the bird, all I did was liberally, very liberally, coat it with DP's Raging River rub. Chris, Qfan, that RR rub turned out one delicious bird!!! I usually "Spin" my birds, but I think this one changed my mind. It was unbelievable!! I guess it's still unbelievable 'cause I have another half for lunch today!![p]Frosty Ones,

Tonight is girls night out, so I'll be eating yucky restaurant food...so, if I want a spatch chicken, I'll need to do it tomorrow or Friday night since I leave Sat for a conference...no egg food for almost a week...bummer :([p]Hadn't tried Raging River on a spatch chicken yet...maybe it's time![p]Tonia

here's another one to try. . .marinade your chicken in a 50/50 olive oil/lemon juice with liberal amount of DP jamaican firewalk. . .then spinkle more jamaican firewalk on the bird when you put it on the grill. . .you get kind of a 'jerk' bird going there. .. [p]our favorite though is just a heavy dose of tsunami spin on chicken. . .the two were just made for each other. . .[p]max[p]

Try the RR on the chicken, Tonia. I know you won't be disappointed. I cooked 350° direct on the main grid. Like Max, I always used Tsumami Spin on chicken, but this was really incredible. Maybe I just got lucky. NOT!!! LOL.[p]Hugs,
