Bought a whole boneless pork loin @ Costco. Cut it up in 1-1.25inch chops. Wife prefers the thinner cut.
Tonight, got the egg up to 525, direct, w/ my cast iron grate. Covered the chops w/ Dizzy Dust, cooked them 2-2 and they weren't quite to temp so dwelled them about 45 seconds, checked them with my green thermapen and they were ready. We ate the first one plain, second one w/ some Blue's Hog. Perfect!

I had almost the same thing, except mine were bone-in chops. Yours look great. I also used Dizzy Dust, although I gotta admit, in the DP line I really prefer the Red Eye Express rub with pork chops. Yummy!

I've never tried the red-eye express. I guess another reason for me to visit my local bbq outfitter. I should've just bought the entire set of DP rubs, would've been a lot cheaper!

Left Iowa in '96, but still miss the Iowa chops and fresh Iowa sweet corn. I used to eat 2-3 ears minimum at a sitting with a meal... MMMMMMMMMM!!!!!

Ya there is nothing better than Iowa sweet corn. I had two ears last night. I had to cut it off the cob though. Didn't have enough cob holders for everyone. Still tastes great!
