Bought a whole boneless pork loin @ Costco. Cut it up in 1-1.25inch chops. Wife prefers the thinner cut. :)

Tonight, got the egg up to 525, direct, w/ my cast iron grate. Covered the chops w/ Dizzy Dust, cooked them 2-2 and they weren't quite to temp so dwelled them about 45 seconds, checked them with my green thermapen and they were ready. We ate the first one plain, second one w/ some Blue's Hog. Perfect!
