Here is a pic on the rub (took it off the wiz's site for carolina bbq)
My question is this I don't have a leave in thermometer yet. My plan is not to open the BGE all night and start checking the temp in the morning with my theromopen every hourish. Does that seem like the right thing to do.
Also I experienced my first flashback tonight. I have less arm hair than I started with. Lesson learned

D@mn it easier cooking on the egg than posting pics. I just spent 30min trying to post that pic. Smelling like burnt hair didn't help.

That's what I do. If you are worried about time and think you may need to adjust the temp to hit a specific finish time, leave one in so you don't have to open the dome. Otherwise, do a few checks with the thermapen in the AM.
