Jerr, for years i have used the same method for cooking all kinds of fish on a grill. i used to use it on the weber grill and have used it on the egg and it works great in both modes. filet the fish, put it into a foil pan (i make my own from a double layer of heavy duty foil), lightly coat with olive oil, season as you wish ( i use cajun seasoning and lemon zest), cook in the egg at 400 degrees for 10 minutes (i use mesquite wood for smoke flavor on fish) for each inch of thickness or until done to your pleasure. i have used this method for all types of fish and have never had it fail. good eats!
