Great new recipe for Pineapple Head

I did this at the last Big Green Egg Academy class. It is seriously good.

Peach Shortcake

1/2 cup of sugar
1/2 cup of water
1 TBL Pineapple Head Rub
1 super ripe peach peeled
3 whole peaches

Melt the sugar in the water with the Pineapple Head. Add that and the peach to a blender and puree it.

Cut 3 peaches in half and remove the pit. Sprinkle the exposed peach meat with Pineapple Head. Grill these meat down direct at 450° for a few minutes to slightly soften them and char marks.

Slice 6 pieces of pound cake and put a generous amount of the syrup mixture over each one. Top each piece with a peach half and squirt on some whipped cream. Try and eat it without smiling. :)
