Estimated Brisket cook time

I know you cook to temperature but I am doing my first brisket and am wondering if I can get a ballpark for how long to estimate for a 7.5lb brisket cooked between 225 and 240. I plan on pulling aroung 194 to 200 internal temp.

At least 10 hours. Closer to 12 though.

I would guesstimate around 12 hrs. I ended up pulling my last one at 195. I learned not to not go by temps but by using a fork and twisting it to check for doneness.

12 hours is a good guesstimate, but it could go 15. -

I generally go by 90 minutes / pound as an estimate, and I aim to be done a couple of hours earlier than I actually plan to serve. This gives me a buffer in case my cooking time goes over, and also frees up my Egg to cook appetizers and such for the guests. When the brisket is ready, I double-layer in foil, wrap in a towel or two, and put in a cooler until I'm ready to carve.

I cooked a nine pounder for 4th of July here in Columbus. Came out great following the advice given above.
Have to get in shape for the Bucks games coming up here in sunny Columbus.
