Fidel has a great recipe, he made these at the Fla eggfest (I think) do a search for that. I know I have some flat irons in the freezer, I think that is what is for dinner. It would be better to marinate overnight.

Not really a recipe, I did these recently using leftover london broil and they turned out really well.

I have been making fajitas lately using the modified Alton Brown and/or Fidel method using Fajita Marinade 1 from allrecipes.com. Two hours marination or more (more is better) is a key to success. Good luck!
The marinade:

I am ready! If you use a flat iron, there is a thick vein of hard fat on one side that needs to be cut out. The one in this one was not that big

Fidel, thanks so much. Im hoping to try it this week. I'll let you know how it works out.

Costco sells a Carne Asada marinade in a big plastic container. I marinated some chicken strips for a few hours yesterday. Threw some red and green peppers as well as a red onion in my wok on the coals first. DO NOT POUR OIL INTO THE WOK WHILE IT IS SITTING ON HOT COALS (lesson learned)! Did the veggies and then the chicken. Both my Wife and the kids said it was the best yet. Way too simple not to do again.
