Doing a competition that will have both amateur and pro divisions. I have been in the pro for the last two years , but lost a very important part of my team and will need to drop down to amateur division......less work, pressure and more fun. My questions is that we only have to cook chicken, ribs and a "Special Selection". I need some ideas for the "special selection" item. Thinking I should not get to exotic and stay with something like pork tenderloin or a shrimp dish (we are in the Lowcountry). Not sure if the judges will be the KCBS ones or not......they have very distinct palettes. Would love to do lamb, but think that many people don't care for it. Or should I just cook up some exotic dish? Any input would be much appreciated! Thanks, Paul
