Hi folks.
I'm doing a 16 pound slow cooked (225) prime rib tomorrow.
Could you recommend the best set up for my XL.
Also sear or not to sear that is the second question.
Thanks for any advice you can provide.

With a lower temperature cook, if you don't sear and say you cook to medium rare. The meat from center to outer edge will the same color. A good sear will will get the outer edges to the medium look, like a traditional prime rib look.
Either way it will taste great.
I don't cook on an XL and I don't know what accessories you have.
On the large I cook with a raised grid using the adjustable rig and a drip pan underneath.
I follow thirdeyes method the pictures below don't have a sear, it looked so nice I didn't want to chance the sear. I would do the end sear.
Here is a link to the Playing With Fire and Smoke method for Prime Rib, I sure was happy with the outcome.
No sear

GG,
That's one awesome looking prime rib - wished I had a piece of it now to go with bfast! -
Next time you're alone with a prime rib in the fridge, sneak off a slice and cook it up for breakfast. It's great .... and if you are careful with the knife, no one will be the wiser :laugh:Happy Trails~thirdeye~Barbecue is not rocket surgery -
One thing to consider here is that more than two of your 20 or so guests might want end cuts. If you cook it whole, you will only have two.Happy Trails~thirdeye~Barbecue is not rocket surgery

You're bad  That what I call a good breakfast. Too bad I had to have my healthy omelet this AM, almost broke down but did't.

.
Now that's just not fair. No prime rib and no eggs. Dang.

The roast looked so pretty on the egg I didn't dare end sear.
The firs serving I wished I had completed thrideye's instructions. I just wanted the cuts to have the traditional outer medium look.
The flavor, taste and enjoyment of the cut Prime Rib was fantastic.
I sure enjoy the recipes and advice over at thirdeye's site Playing with Fire and Smoke.

was there any chips or chunks added to this cook or was it pure lump and no smoke?

Now that is a thing of beauty!
