I have passed up a 6.6 lb brisket flat @ Publix 2 days running because it seems a bit thin at the tail.
What is the minimum thickness I should accept in a brisket flat?

1.5" maybe at the thinnest part of the flat. I have seen all sizes. The things is to find uniform thickness and grain patter. Good luck.

Thanks, CG. I'll pass on this one- ot would be less than 5 lbs trimmed to 1.5".
