Pork Roll Ups via LR (pic heavy)

Thanks to Lawn Ranger's pork roll up recipe, this turned out great, thank you LR.

I marinated the thinly sliced pork chops in LR's recipe (search "Pork Roll Ups" and it is the most recent post under that search) but since I didn't have peppers already skinned and softened I roasted my own.

The marinade makes this what it is, I may spice mine up a little next time, but the staples will remain (especially the adobe sauce and brown sugar).

FYI, I had to use reduced fat monterrey jack because the wife keeps me honest, other "full flavored" cheeses would make this amazing, but marinating the pork makes the difference, would have been great to add some orange juice to the marinade.
