A close friend ask me if I could make pulled beef for her son's graduation party, along with a few recipes of Apple Pie beans. Went to Sam's and picked up 20+ pounds of chuck roasts and will throw them on the egg tomorrow morning before work. I don't believe any of the roasts is bigger than 5#, so I'm hoping to be done cooking and pulling before bedtime tomorrow nite.
Is it an issue to stack the meat? The bark isn't an issue and I'll still have some on the perimeter that's exposed. I'm keeping my fingers crossed!
