Ribeye feast

Howdy folks...
Heres yesterdays dinner :
Found an american Beef ribeye roast at my wholesale market a couple of weeks ago and couldnt resist...
Gave it a couple of weeks for extra wet aging in the refrigerator and finally cut it into nice steaks.
Ooooops
Sides :
-Potato Wedges
-Romaine sald with parmesan
-onions and bell pepper
-Eggplant
-Chipotle Butter
-a nice cold "Edelstoff" Beer from Bavaria

Excellent cook! Sorry about the flashback accident--had to smile a bit when I saw the burnt curlies, because I remember how quick and hot it was whne I got burned a few weeks ago

DM those ribeys are beautiful!! The rest of the meal looks pretty good too. When you grill you romaine do you brush it with olive oil or anything?

Just a little EVOO, salt and Pepper on the eggplant.

Just like the eggplant, EVOO, Salt and Pepper.
The grilled over medium heat, topped with parmesan and finished indirect.

Very nice marbling in the steaks. I have wet aged my whole ribeyes for up to 60 days from pack date.
