A few days ago AZRP posted an easy recipe for Hi-Gluten pizza dough. I made the dough yesterday and made the pizza tonight. The dough was easy to work with and spread out without difficulty(I need to practice that part, though). The crust turned out crispy and chewy and this was probably the best pizza I've made since using hi-gluten pizza.

2 cups hi-gluten flour
1/2 tsp salt
4 tsp sugar
1 tsp instant yeast
3/4 cup warm water
Knead in a stand mixer at low speed for 15 minutes. Shape the dough into a tight ball. Spray some Pam in a 1 gallon ziplock lightly, and place ball into the bag. Don't seal the ziplock and fold over so that the ball is sitting on the seam. Refrigerate until doubled in size about 24 hours. If anybody has any questions, call me on my cell at 520-419-8150. -RP

Holy buckets! Those looks exactly like the pies I have been trying to accomplish. My next clicks will be to find that recipe. If I get home early enough tomorrow I could have some awesome Friday night za!

Nice pies egger66; I just went into the den to ask my wife where our kitchen-aid mixer is that we got 9 yrs ago for a wedding gift thinking I am finally gonna' attempt pizza w/ this new recipe and she tells me her mother has it who lives about 3 hours away-maybe I'll have to pay her a visit. I am always complaining that there aren't any good pizza joints in our area.
