Lots of folks asked for my chicken wing recipe, so here it is. I know some folks took some pics of it, so please post them here if you have them.

Dizzy Pig Jamaican Firewalk Rub
Peanut Oil

Take a packet of chicken wings and cut off the little wing tip and discard or save and freeze to make chicken stock out of them.

Put the wings in a big zip lock bag and splash with some peanut oil. Close the bag and work the oil around so it coats all the wings.

Next liberally sprinkle some Dizzy Pig Jamaican Firewalk rub on the wings and massage the bag to work it around. Work the wings in the bag so the ones with no rub on them come up to the surface. Add some more Dizzy Pig Jamaican Firewalk Rub. Repeat this another time and you should have somewhat covered them all. Put them in the fridge for a few hours or overnight.

Cooking: Fire up the egg and let stabilize at 325-350. Let the fire burn till clean (no smoke), then take the bag and dump the wings on a raised grid. Arrange the wings so they are all the same side up. Sprinkle some more Dizzy Pig Jamaican Firewalk Rub on the one side and close the lid for a couple of minutes, then open and flip the wings and repeat.

The wings are cooked slow and high in the egg. The fat will render out over the 60 minute cook and they will brown up nicely.

You must be diligent in watching for hot spots and turn them every 10 minutes. After an hour, pull them off and put in a tray or bowl to rest for couple of minutes. The skin will be crispy with a nice sweet flavor and some latent heat.
