I think I am fine as far as the safety issue...but am now very concerned about completion time. Went to bed at 1:00am...fire was 275...woke up at 6:15 fire was 200. Internal meat temp was 160..

If you read my post below you will see that I was scheduled to leave town at about 8:30 this morning with the butts. I think I am screwed with that idea.

I guess I can cook unitl I am ready to go...wrap in foil & towels and stick in a cooler and stick in the oven when I get to South Carolina?

    Options
    You can foil and put in your oven (350*) while you get ready to leave, then wrap up, place in cooler for travel. If it is not fork-tender when you get there - back into oven again to finish up. I think you will be OK.
