Hello Everyone[p]Just joined the BGE family 2 weeks ago. Purchased a LBGE. Did brauts that night! They were great! [p]Did a thin round steak last night, managed to keep it medium but it wasn't a good cut of meat. Still was passable as table fair. Need to get some thicker, better cuts to officially christen the egg. Today it's pork chops. These will be better. [p]Have been learning much from everyone’s postings and scanning the archives. I have the BGE fever like everyone, can't wait to try some slow and low cooking!

Welcome to the family CDC. Lots to try, so little time.....
Pork chops are great on the egg. Sear em hot, then dwell em in a closed up egg for a few more minutes. Spice Cooks thick pork chop recipe uses a brine, and is worth trying.[p]Good luck, and don't hesitate to shout if you need anything.

Nature Boy, thanks for the tip. [p]have been reading posts about brines, need to research this more! a freind keeps promising me a pheasnt. a brine sounds like the way to go with it.[p]

CDC, suggestion - when you do make it for a group, make it ahead of time so that you know that it will be done when you need it. Merely wrap and put in a cooler if it gets done early.[p]Once pulled, it is easy to reheat in a plastic bad at about 30% power and 6 minutes in you microwave.

The brine for the chops is quick and easy, and really makes for some juicy chops. I believe it is under new recipes. Have fun![p]NB
