I love hickory on pork butts, but it seems a little "harsh" on ribs. I'm looking for some alternatives...apple? Maple? Just something milder.

Fruit woods. Apple or cherry or a combo.
Just a guess.

I change off but mostly use fruit wood. Cherry, Apple, Grape and a good alternative I like is Jack Daniels chips.

jphgator,
Try Tobasco barrel chips. Tobasco buy the twice used JD barrels and uses them ten times. Perfect for ribs.

Ribs without at least some hickory just seems wrong.
Maybe mild on the hickory, heavy on the pecan? -
I use Apple and Cherry

I geaux for pecan. Sometimes pronounced pee-can (can as in a can of beer) but I pronounced pa-con. Either way you say it, it smells and cooks the same.

I typically use a mix of pecan and apple. I cooked some ribs last weekend using black hawthorne charcoal from Real Montana Charcoal and they were phenomenal! I'm going to be cooking up 8 racks tomorrow with it tomorrow. Yum!

I'll add my voice to the apple and cherry suggestions.

Chef Charles,
Ontario Gas BBQ carries them. They were out of stock the last time I was there but they said they would have them for the season this year.
Sorry I didn't notice this today.

Thanks. I am going to have to stop there one of these days when I make my way back to southwestern Ontario.
