Have any BGEr's ever brined a butt like you would to poultry? I'm thinking about doing one next weekend and would appreciate any comments or experiences you may have had.

    NEWBGE,
Haven't done it, but I bet it is good. Maybe use Spice Cook's pork chop brine. I have been toying with the idea of injecting my next butt. Keep us posted on what you end up doing. I am sure some others will jump in with their ideas.[p]NB

    NEWBGE,
I have a recipe for a Jerk Brine that suggests brining a butt for one prior to applying the Jerk for another day. One of these years, I will get around to doing just that.[p]RhumAndJerk[p]

Nature Boy, I always inject my B.B. I throw a hand full of jalapeno slices, onion slices, garlic cloves, Balsamic vinegar, buttermilk, and some of my favorite spices and seasonings (usually Prudhommes Pork & Veal Magic and Brucies Blend Zydeco Seasoning into a blender and turn it into a thick liquid. Then I inject it into the butt from many directions. Plunge the needle in deep and inject as you withdraw it. Use the mixture to coat your butt and sprinkle seasonings all over the outside. Wrap it in plastic wrap and throw it in the fridge for a day or two.
