Fajita Night

The pregnant wife said she wants fajitas so thats what she got tonight. Marinated flank steak for about an hour in a 50/50 mix of low sodium soy sauce and OJ and a couple big spoonfulls of minced garlic thrown in. Then coated liberally with Salt Pepper and Garlic Powder. On the cast iron grate at 500 degrees for about 3 mins per side.
Texas Sweet Onion and a couple bell peppers tossed in EVOO and then in my new wire basket.
The basket worked great. Just left the lid open and got some nice carmelization going.
Sliced and ready
Wrapped up with some salsa, cheese, sour cream and some yellow rice.
Havent done this cook in a month or so but think it will go back on the normal weekly routine. Total prep and cooking times combined was under an hour.

Great looking fajitas. I'm trying to watch my carbs and it's one way I can enjoy Mexican cooking. I like the basket!

GREAT lookin cook and love the basket!..cant tell from the photos...does the handle detach?

That basket rig looks awesome. Does it cook really well?This is the greatest signature EVAR!

The handle does not detach but the lid is hindged on the opposite side from the handle and has a latch on the handle side so you can toss stuff around in it and even flip it upside down without worrying about spilling anything. The basket is the perfect height for a large egg. Have not tried it in the XL. With the grate at the normal level on top of the fire ring and the basket sitting on the grate you can close the lid and the it will sit on the basket handle as the handle is already laying right on the rim of the base.
