Thanks to Qbabe & all who organized Qcala! Got my door prize from Greg of Guava Wood Farms Hawaii. Fantastic!!! I use very little wood, none with chicken but not anymore! Smoked 2 chickens have 2 more on. I will be very popular this week :laugh: By the way the band was awesome!

Hi Susan! So glad you got that Guava wood! It has quickly become one of our favorites! Have two big boneless butts and a shoulder going with guava now as a matter of fact to feed my staff a nice lunch tomorrow.
Anyhow, if your guava wood came in like ours did, it is in very large chunks. We have found that, since it is SUCH a hard wood, if we throw a big hunk on the coals, you think it's done it's thing, only to flare up again later when you don't want more smoke. When we are going to use the guava, we take a hammer and sharp chisel, and break the large chunks down so they are only about half to three quarters inch around, and the original shipping length....about 3 inches. This way, they burn at a more controlled rate, and don't tend to flare up later. Just speaking from our experience! Just my 2 cents. ( we oversmoked a cook or two, then started breaking them down)
