I cooked up some great super lean burgers and some baked taters this evening.
First I needed to get together the burger spice..
Paprika, Salt, Garlic Powder, Onion Powder, Black Pepper, Ground Mustard, Cayenne Pepper
I also needed to get the dipping sauce for the potato's mixed..
Sour Cream, Lime Juice, Cilantro, Fresh Garlic, Cumin, Salt, Lime Zest, Cajun Seasoning
Now to prepare the meat...
I used roughly 1.75lbs Fresh Tuna and minced it up to form a rough ground meat.
Then I added plenty of burger seasoning and let sit at least half an hour...
While that was curing I moved on to a butter sauce for the potato's.. Unsalted Butter plus burger seasoning....
I then coated the potato's and placed in the oven. The potato's are Dutch Gold.
The Egg was lit but is it ready?
I now have formed the tuna into balls for easy flattening right at the egg...
Grillin and Drinkin...
Everything is done and now for paper plating.. :P
I hope to have the recipes for the burger seasoning and the potato dip posted soon.
Enjoy!

Those tuna burgers look great!! Just wondering if you used anything else as a binder to hold the patties together?? If you could email me the quantity of spice to each pound of tuna it would be greatly appreciated.
Excellent post and pictures. Thanks! -
