Hey guys, quick question:
Do you add the smoking chunks/chips before you light the egg or right before you put the food on for long cooks like ribs, briskett, butts etc. I hear people saying they mix in the chunks with the charcoal so I figure that means they do it at the beginning...

I mix/layer it in dry so yes its before the food goes on, for me.

For the long cooks I mix it in for shorter cooks I frequently put it in a foil packet so I can take it out for the next.
