Stuffed Pork Tenderloins

Stuffed some pork tenderloins the other night after seeing a few pics around here of similar cooks. Turned out pretty amazingly.

The stuffings
The wife makes this as a salad topper and I decided to try it in the tenderloins. Its is chopped walnuts and a crushed up bag of ramen noodles sauteed in butter.
The XL taking its first breathes in its new home.
Sliced in half to reveal the stuffings.
Roasted Red Peppers, Sauteed Onions, and White Cheddar
Spinach, Gryere Cheese, and the pecan/ramen mix
Shredded cheddar, spinach, and sauteed onions

Oh and it was even better the next day as pork sliders on whole wheat Hawaiian rolls with a dab of raspberry chipotle sauce.

Did you just do on cut as in butterflying it???

Its a Wusthof 7inch filet knife. My newest addition and one of my favorites now.
This is the same blade just different handle...

To cut the tenderloin i cut straight down from the top about 3/4s the way throught and then cut out towards each side to lay the loin out flat. I then pounded it out flatter. -

Is much smaller. Unless, of course, that tenderloin is from "HogZilla"

They are tenderloins not loins...they may look a bit thicker bc of the stuffing but those buns they are on are only about 2 inchs square. That may be what makes them look bigger. A loin would be much bigger.

Hope mine turn out as well tonight! :woohoo: Got some aspragass on now and the tinderloin is in the frig. Sick last week and some test run this week so its been a spell since I Egged. Looks like I got a hard row to hoe tonight!!
