going on at 275 indirect
The 4 hour mark right before foiling
Foiled for 1 hour then back on for 1/2 hr befors saucing
Sauced with the carnivore (it's the favorite around here) I need to get bigger plates but these are fork tender
also did some chicken halves for the neighbors
